A Culture of Care

Kamat invests in her people, supports diversity and encourages both training and growth. Every pre-service meeting ends with a ritual “One House” chant, a reminder that being part of the team means that you’re family. To motivate continuous development, Chef organized a “field trip” to Brooklyn Grange, the leading rooftop farming and educational facility, and employs young aspiring chefs.

Innovative Perspective

By utilizing trimmings from oxtail and curried crab entrees, Chef put a close-to-zero-waste dish on the menu and features dessert from the Harlem Chocolate Factory to share the message and outreach of their programs. Kamat and her team serve a nightly menu that celebrates traditional ingredients and recipes from Afro-Caribbean cultures, inspired by their local NYC community.

Chef makes a powerful impact on business, pricing, margin and inflation. A list of distinguished recognition for Tatiana by Kwame Onwuachi includes 3 Stars by the New York Times, rated the number one restaurant in New York City 2023 by NYT, and the World’s 50 Best Restaurants Resy One to Watch Award. Kwame’s team even hosted Beyonce’s post concert event and launched Tatiana After Dark to help drive down food costs.
